ServSafe certification in Texas — what's the renewal window like?

I manage a food truck in Austin and need to renew my ServSafe Food Manager certification before it expires this summer. I got my original cert in Houston but I'm not sure if Texas requires anything different for renewal versus the initial exam, or if it's just a straight retake.

I also need to make sure my two new employees get their food handler certification Texas requirements sorted before we expand to a second truck next month. The city inspector mentioned something about needing at least one certified manager on-site at all times, which I already knew, but I wasn't sure if that changes anything for part-time staff.

Does anyone know if you can take the ServSafe Manager exam online in Texas, or does it have to be proctored in person? I've seen conflicting information and I don't want to take an online version that the health department won't accept.

Trying to get all this sorted before the summer rush. Any Texas food service folks who've navigated this recently would be a huge help.

Texas accepts the ServSafe Manager exam in both online proctored and in-person formats — as long as it's proctored, the health department recognizes it. I renewed mine online last April with no issues. Just make sure the proctor is an approved ServSafe proctor, not just any ID verification service.

For a food truck operating across multiple locations, make sure your certified manager designation is tied to the permit, not just the person. When you expand to a second truck you'll need to check with Austin Public Health whether a manager needs to be physically present at each location simultaneously or if one cert covers the operation.

Your food handlers just need the food handler card, which is a shorter course — not the full manager exam. That's separate from your manager certification. Texas requires employees to get their handler card within 60 days of hire, so you've got a small window with the new staff.

Renewal is a full retake in Texas, not a shorter refresher course. Some states have a shorter renewal path but Texas doesn't. Budget about 3 hours for the exam plus the online course if you do the self-study option. I renewed in February and it was pretty straightforward.

Honestly I almost didn't bother renewing because I heard the Food Manager exam was brutal and figured I'd just deal with the consequences later. Bad idea obviously. But the renewal process in Texas is pretty much the same as the initial cert — you just retake the ServSafe Food Manager exam through an approved proctor, there's no special "renewal version." It's still the same 90 questions and you need a 75 to pass. I took mine online with a remote proctor and it was fine.

One thing that caught me off guard was the allergens section. I wasn't expecting it to show up as much as it did on the actual exam but it definitely does, so don't skip it. I used this allergens guide to brush up and it helped a lot. If you already have your food handler background from the original cert you've got a solid base, just make sure you're not going in cold on cross-contact and the major allergen categories. You'll be fine, it's stressful but totally passable.

Honestly I almost said screw it after my first attempt because the allergens section wrecked me. Didn't think I'd pass. But I went back through the allergens guide a few more times and it actually clicked. For renewal in Texas it's basically the same deal as the initial exam, no special state hoops that I noticed, just retake the proctored test and submit your score. Houston or Austin shouldn't matter since ServSafe is a national program.

The renewal window is five years from your certification date so you've probably got more breathing room than you think, but don't wait too long because finding a proctored session on short notice is its own headache. Just book it now while you're thinking about it. Studying was annoying but passing felt really good and you'll get there.
